Ingredients:

  • Burger: Black Beans, Green Pepper, Red Pepper, Spinach, Egg, Breadcrumbs (Panko & Whole Wheat), Onion, Garlic, Cayenne, Cumin, Parsley, Salt & Black Pepper
  • Chipotle Mayonnaise: Chipotle Adobo Peppers pureed with Mayo and sweet red pepper
  • Salad: Corn, Avocado, Cherry Tomatoes, Olive Oil, Lime Juice, Salt & Pepper

Ingredients:

  • Shrimp Sauteed in Coconut Oil and Jalepeno Pepper
  • Shrimp seasoned with: All spice, Cayenne pepper, Paprika, Salt, & Black Pepper
  • Salad Dressing: Lime, Lemon, Olive Oil, White Wine Vinegar, Salt, & Black Pepper
  • Toasted Pine Nuts
  • Tomatoes
  • Mixed Greens

Balsamic Portobello Mushroom Caps.

Ingredients & Directions:

  • Portobello Mushroom Caps – baked in the oven at 350 F for 25 minutes
    • olive oil drizzle
    • seasoned with salt, paprika, black pepper, garlic, onion powder, oregano, thyme, & cayenne pepper
  • Prosciutto placed on top of mushroom caps and crisped for 5 minutes in the oven
  • Arugula, Goat Cheese, and Sauteed Mushrooms placed on top of the caps and warmed in the oven until the arugula begins to wilt
  • Balsamic Glaze drizzled on top after removing from the oven
    • reduced balsamic vinegar with coconut sugar

  • Balsamic Dijon Sauce (balsamic vinegar, dijon mustard, olive oil, honey, salt, pepper)
  • Grilled Asparagus
  • Dried Parsley Garnish

  • Shredded romaine lettuce
  • Tomatoes seasoned with parsley
  • Shredded Tortilla Chips
  • Green onion
  • Shrimp fried in jalapeno-infused coconut oil
    • Shrimp seasoning (flour, garlic powder, paprika, allspice, cayenne, oregano, salt, and pepper)
    • Shrimp tossed in lime juice and parsley after frying
  • Chipotle Aoli Sauce
  • Small Tortilla shell grilled on the BBQ
